Oysters were large, fresh and juicy. | Georgia Waters

I have been to Kimpton Aysla hotel several times since they opened their doors couple of years ago and I have thoroughly enjoyed myself every time. Sunday, two weeks ago, was no exception. We were there for White Blossom party, a beautiful day of gastronomy, live entertainment and artisan market, now in its second year.

This time my friend Georgia and I were eating at Zayt Pool Kitchen & Garden Deli. We decided to try their seafood, so – after obligatory pan con alioli y tomates – we started the day with a couple of oysters. Bread and alioli were good, but the grated tomato drizzled with olive oil really stood out. I had to stop myself from eating too much before the rest of the meal. Oysters were large, fresh and juicy. I liked mine just with a squeeze of lemon, while Georgia, in her usual manner, added some tabasco sauce to hers. We washed them down with a few sips of a very nice cava, toasting to ourselves and to life! It felt like the most delightful way to start a relaxed Saturday afternoon between a couple of pools.

Next up, I chose Grilled squid in garlic and parsley while Georgia opted for Octopus with Mallorcan potato and candied piquillo peppers. We ordered some green salad on the side and were pleasantly surprised that green leaf lettuce came halved, grilled and sprinkled with shavings of parmesan. The food was simple, fresh, tender and absolutely perfect for a hot day outside. We ate slowly while enjoying a live music performance by Barrilete Cosmico right next to our table and several acts of entertainment, including a performer on stilts manipulating a levitating crystal ball and a ring acrobat.

For dessert, we chose Mojito curd with black chocolate crumble and redberries. I love desserts at Kimpton Aysla. One of their chocolate desserts has been my favourite on the island for years! So I was not particularly surprised when I discovered that Mojito curd was another hit, both in terms of taste and presentation. I loved the contrast of tanginess of the mousse and bitterness of the chocolate crumble!

After lunch, we got pampered by Marta and Marek at CODAGE Paris stand, who analysed our skin and custom-made some potions for us to take away. We got inspired by Mexiterranea fashion, artfully fusing Mexican and Mediterranean influences and relaxed by walking through their semi wild gardens. We left Kimpton Aysla with both our stomach and our hearts smiling in appreciation of this great place, away from the typical touristy hubbub…

The verdict

I adore food at Kimpton Aysla and that at Zayt Pool Kitchen & Garden Deli was no exception. The service here is consistently great too, and I love their relaxed luxury vibe that spans from the hotel main building to the gardens and pool areas. I have no doubt that I will be back again and again!
