SWEET-TOOTHED residents of Inca are bidding to enter the Guinness Book Of Records when they produce the world's biggest ensaimada.
The delicacy, a traditional Majorcan pastry, will be cooked by members of the Balearic Association of Bakers and Confectioners (Asociacion de Panaderos y Pasteleros de Baleares) on Thursday during the town's annual Dijous Bo festival.

Over 110 kilos of sugar, 400 kilos of flour, 400 kilos of butter and 1'400 eggs will be used in the mixture to make the pastry measuring around 15 metres in diameter.

It has taken 10 days to complete the mixture and will be assembled and cooked in 80 centimetre portions.
The previous record has been held since 2003 by bakers from San Pedro, just outside Argentina's capital of Buenos Aires, but the Majorcans are determined to bring the record back to the home of the pastry and enter the record books at the same time.
