Matias Iriarte is responsible for Ginbo's new bar along the Paseo Mallorca. As opposed to gin, Chapeau specialises in whiskies and cocktail, and on Tuesday night Matias's cocktail "El Luchador" (The Fighter) was named the winner of the Bacardi Legacy competition in Madrid.
